Savory Zucchini Bread

I love this bread any time of year. It’s a wonderful one to make in advance and have ready for breakfast throughout the week. I enjoy it with scrambled eggs or smoked salmon and sauerkraut. If you are looking for bread that’s high in fat and fiber to keep you going for multiple hours, this zucchini bread is an excellent choice.

Savory Zucchini Bread

You will need:

  • 1 cup almond flour

  • 1 cup oat flour

  • `1/2 cup arrowroot flour

  • 1/4 cup ground flaxseed meal

  • 1 teaspoon each: baking powder and baking soda

  • 1/2 teaspoon coriander

  • 1/4 teaspoon salt

  • 1/8 teaspoon nutmeg

  • 2 eggs

  • 1 can organic, full fat coconut milk

  • 1 cup grated zucchini

  • 1 teaspoon apple cider vinegar

Preheat oven to 350 degrees F and oil a loaf pan with olive or sunflower oil.


Combine the dry ingredients together in a bowl. Add the wet ingredients in the order listed.

Mix well and pour the batter into the oiled loaf pan.


Place the bread in the oven for 35 minutes or until it’s cooked through.

This bread is delicious on its own or with ghee or nut butter. It is great toasted, too!
