spaghetti squash bake

This recipe will feed a crowd and everyone is sure to enjoy it.

SPAGHETTI SQUASH AND CHARD BAKE

You will need:

  • 1 spaghetti squash

  • 1/4 cup olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 pound ground pork

  • 2 tablespoons tahini

  • 2 tablespoons lemon juice

  • 1 cup chicken broth (home-made OR organic, low sodium, no sugar added)

  • 1 bunch Swiss chard, chopped

  • Sea salt and fresh pepper to taste

 

Preheat oven to 375 degrees.

Poke squash all over with a fork, place in oven, and bake for 30 minutes.

Remove from oven and set aside to cool.

 

Oil a glass baking dish with olive oil.

Using a fork, scrape out the squash and place it in the baking dish with olive oil, salt, and pepper.

 

Meanwhile, add oil, onion, garlic, pork, salt and pepper to a sauté pan. Cook on medium stove heat until onion is translucent and pork is cooked through, about 5 minutes.

Add chard and sauté for 10 more minutes.

 

Add the tahini and lemon juice.

Turn off the heat and spread over the spaghetti squash. This mixture should be a bit saucy in consistency.

 

Bake at 375 for 15 minutes. Remove from oven, cool for 5 minutes, slice, and enjoy!
