pumpkin chili

This is a wonderful time of year to make a pot of soup that will feel warming and supportive as you navigate your days.

PUMPKIN CHILI

You will need:

  • 1/2 pound grass fed ground pork (or all beef if you prefer)

  • 1 pound grass fed ground beef

  • 2 tablespoons olive oil

  • 1 yellow onion, diced

  • 1 red bell pepper, diced

  • 4 cloves garlic, minced

  • 1 teaspoon salt

  • One 28 ounce can crushed tomatoes

  • 1 1/2 cups cooked pumpkin

  • 3/4 teaspoon paprika

  • 1 teaspoon cumin

  • 1/2 teaspoon cinnamon

 

Place a stock pot on the stove and add olive oil. Add the onion, garlic and pepper and sauté on medium heat for 5 minutes or until the onions are translucent.

Add the beef and pork. Use a metal spatula to break up any lumps. Sauté for 5 minutes, or until cooked through.

Lower the heat and add the tomatoes, pumpkin, salt, and all spices. Stir to combine well, then raise heat to bring to a boil. Once bubbling, lower heat to a slow simmer, cover, and allow to simmer for at least 20 minutes to combine flavors. The flavor will only get better the longer this chili simmers.
