Coconut Flour Waffles

I love this recipe because it can be served with sweet toppings such as fruit and nut butter or with savory ones such as stew or eggs. They are high in protein because of the eggs and have a slightly dense, chewy texture because of the coconut flour, which is also high in fiber.

Coconut Flour Waffles

You will need:

  • 1/4 cup coconut flour

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 3 eggs

  • 1/2 cup coconut milk

  • 1/2 teaspoon vanilla extract

Whisk all the ingredients together until thoroughly combined.

Heat your waffle iron and grease it with a bit of olive oil.

Cook for about 5 minutes, or until golden brown.

You can also make this recipe as a skillet pancake! Oil a skillet with coconut oil, spread the batter into it, and cook, covered, on medium low heat, for about 3 minutes. Flip and cook 2 minutes more.
